Honey, in an elemental sense, is a supersaturated sugar solution. As such, all raw honey, which has not been processed, will undergo crystallization over time. Crystallization is the natural act of the sugar and water separating within a container of raw honey which then forms tiny sugar crystals. Left long enough, the honey will actually solidify.
What is important is that this is NOT a sign of spoilage. Honey NEVER spoils due to its anti-bacterial properties. They have literally pulled honey from Egyptian tombs which was still safe and good to eat! Some people actually prefer crystallized honey over liquid as it is easier to spoon into tea/coffee in crystal form than it is to pour it; however, if liquid is preferred, simply placing the jar in hot water will melt the honey back to its original liquid form with no decrease in quality.
